This year, get a jump on springtime by "forcing" garlic bulbs indoors. You've heard of forcing daffodils, crocuses, and paperwhite narcissus, but garlic can be forced, too, yielding tender, tasty greens.
Garlic greens are an easy to grow treat, and a great way to use the little inner cloves found in a head of garlic. The young green shoots are great minced in salads or sauteed and added to mashed potatoes. In fact, you can use them in any recipe calling for mature garlic.
To start indoors, plant several cloves (pointy side up, of course) in a pot of slightly wet potting soil or vermiculite. Place the pot in a sunny window, and in a week or two you should have your first green sprouts. Snip them sparingly at first and you’ll be able to enjoy them for several weeks. Keep a couple of pots in rotation, and you’ll be able to enjoy this fresh treat all season.
