CINNAMON BASIL
Ocimum basilicum
Cinnamon is not just in the name – it’s in the aroma and flavor! The sturdy stems of this lovely plant are dark purple red, with dark green, cinnamon-scented leaves growing up to 2 inches long. Small terminal racemes of pink flowers grace the plant in summer.
Basils are loaded with volatile oils, responsible for the heady aroma and strong flavor so essential to cooking. The composition of oils varies greatly in different basil types, thus accounting for the wide range of scents available. Cinnamon basil has a strong cinnamon scent. Pick the leaves and use fresh or dried in tomato dishes, pasta sauces, vegetables and soups. Perhaps because of its distinctive flavor, some of my favorite basil recipes feature cinnamon basil. Be sure to look for them in the recipe collection.
If you can bear to let this plant flower, add it to a bouquet for the fragrance. You can also use basil in the garden as a companion plant to repel aphids, mites, and tomato hornworms

BASIL BLUE SPICE
Ocimum ‘Blue Spice’
What a treat this basil is! For the nose it has a spicy fragrance with a vanilla overtone. For the eye it has lovely light purple flowers set on deep purple bracts. And for the palate it can be used in fruit salads, with poultry and probably in many other dishes where you would use sweet basil. Said to be a hybrid between purple basil and O. americanum.

SWEET DANI LEMON BASIL
Ocimum basilicum 'Sweet Dani'
Basils are loaded with volatile oils, responsible for the heady aroma and strong flavor so essential to cooking. The composition of oils varies greatly in different basil types, thus accounting for the wide range of scents available. AAS winner Basil 'Lemon Sweet Dani' offers a pure, clean, citrus-lemon aroma. It has been measured to contain 75% more essential oils than regular lemon basil.
This upright, bushy cultivar grows 26 inches high and 10 to 14 inches wide. The narrow, ovate, light green leaves reach 2 inches long with small terminal racemes of white flowers. The leaves release an intoxicating lemon scent when brushed. Both the foliage and the seeds have a crisp, fresh lemon scent!
Use in salads, soups, teas or potpourris--or as a seasoning for chicken and fish. Pick the leaves and use fresh or dried in herb vinegars, fish, vegetables and soups.

THAI BASIL
Ocimum basilicum ‘Siam Queen'
1997 AAS winner, Siam Queen is as gorgeous in the garden as it is delicious on the dinner plate! The sturdy stems support extra-large, 4-inch-long and 2-inch-wide bright green leaves. Clusters of short terminal racemes of purple flowers are borne on the very top of the plant for a highly ornamental effect. A lovely, compact plant, Siam Queen is wonderful in a windowsill garden, outside container, or tucked into your flower border.
Thai Basil or Bai Horapa in Thailand is the traditional basil used in Thai, Cambodian and Vietnamese cooking. Basils are loaded with volatile oils, responsible for the heady aroma and strong flavor so essential to cooking. Thai Siam Queen is loaded with spicy flavor and aroma. The flavor is quite different from other basils with a stronger aroma and a sweet, but subtle, anise flavor. Pick the leaves and use fresh or dried in tomato dishes, pasta sauces, vegetables and soups.

OPAL BASIL
Ocimum basilicum
Opal basil has the same distinctive clove-like smell as green basil. For culinary purposes, it can be substituted in any recipe that calls for green basil, but you would be missing a wonderful and unique variant of O. basilicum if you didn’t showcase the amazing purple-red foliage of this dramatic plant. Use the leaves fresh, as garnish for a sun-ripened tomato sprinkled with a little salt and olive oil. Float a leaf in iced tea or lemonade.
But you might have trouble parting with too many leaves of this beautiful plant. It grows into a small bushy shape, ideal for containers. It’s a wonderful companion plant in your garden, or tucked between bright flowers in your landscaping.
